  • Chili, also known as Capsicum, is one of the most widely exported spice commodities in India. It has a rich history that dates back to the 15th century when it was first introduced by the Portuguese. Today, chili is grown in all tropical and subtropical countries, including India.Product History: Chili is believed to have originated from South America and has been part of the human diet in the Americas since at least 7500 BC. Archaeological evidence suggests that chili peppers were cultivated more than 6000 years ago in southwestern Ecuador and is one of the first cultivated crops in the Central and South Americas that is self-pollinating.

  • Christopher Columbus was one of the first Europeans to encounter chili peppers in the Caribbean and called them “peppers” because of their spicy hot taste. The spread of chili peppers to Asia was mainly due to the Portuguese traders who were aware of its trade value and promoted its commerce in the Asian spice trade routes. The chili pepper is deeply engaged in the cuisine of the Goan region of India, which was the site of a Portuguese colony.

  • Chili is the dried ripe fruit of the genus Capsicum. Capsicum annuum is an annual sub-shrub, which provides red peppers, cayenne, paprika, and chilies, and sweet pepper (bell pepper) a mild form with large inflated fruits. Capsicum frutescence is a perennial chilly with small-sized pods which are highly pungent. It is commonly known as “bird chilly” and “Tabasco.”

  • Dry chili is extensively used as a spice in curried dishes, as an ingredient in curry powder and seasonings, and in making hot sauces. Paprika, Bydagi chilly, Warangal chapatta, and similar high-color less pungent varieties are widely used for color extraction. This color is highly popular among food and beverage processors for its use as a natural plant color.

  • As a medicine, chili is used as a counter-irritant in Lumbago, Neuralgia, and Rheumatic disorders. Capsicum has a tonic and carminative action. Taken inordinately, it may cause gastro-enteritis. The enzyme isolated from chili is used in the treatment of certain types of cancers. Oleoresin capsicum is used in pain balms and vaporubs.

  • Dehydrated green chili is a good source of vitamin C. The substance capsaicin, which gives red chilies their characteristic spiciness, may help reduce inflammation in the body. The cayenne in red chilies has shown to have heart-protecting benefits in a few studies. They also contain some amounts of beta-carotene, very few carbs, and a small amount of protein and fiber.
